#VitaminKemi Hey #Nigeria>>Did you celebrate National #Frozen Food Day March 6th?

Did you know that March 6th yesterday was National Frozen Food Day? President Ronald Reagan created it and I want us to observe it soon in Nigeria. The biggest problem in Nigeria is power supply. Listen to my podcast then lets make this salad below. Thanks to Chicken of the Sea for sending me this recipe. We have larger shrimps here and big Avocados now in season.

Ingredients
2 avocados, peeled, pitted, and cubed
2 tomatoes, diced
1 small sweet onion, chopped
6 (4 oz) cans Chicken of the Sea® Shrimp (any size shrimp), drained
1 pinch salt and pepper to taste
2 tablespoons lime juice

Directions
Stir together avocados, tomatoes, onion, and shrimp in a large bowl.
Season to taste with salt and pepper.
Stir in lime juice.
Serve cold.

#VitaminKemi I grow #African yams behind our village home and turn em to >>YAM CHIPS! cc: @McDonaldsCorp

Yam chips (Smoky version)
Y'all know I've been McUnhappy now for the last 9 years after I left the United States with no McDonald's burgers and fries. So I grow baby tender African yams behind the village vacation house.

Every 2 mos I check them and in these videos, I harvested them and cut them up making yam fries, so tender they taste like McDonald fries. Did you know I once lectured McDonalds about yams in these parts on my Yam101 tweet? In the video I cooked it on a portable stove and you can also cook it on firewood as well to give it a smoky flavour.

#VitaminKemi The Power of Vitamin C and how we do it from the TREE to the Kitchen!

Remember, this harmattan cold season, your immune system is protected well with a dose of Vitamin C tablet or squeeze your own juice like KJ does here in our backyard. After that season is over, you still need vitamin C daily. Vitamin C, also known as ascorbic acid, is a water-soluble vitamin. Unlike most mammals and other animals, humans do not have the ability to make ascorbic acid and must obtain vitamin C from the diet.

#HNNFood WATCH me eat Dog Meat last night for DINNER!

7pm last night, I was eating dog meat hide which we call Dog Pomo. Sorry to the animal activists, the very same beef hide is served to me in this restaurant but last night it was the dog version. Many Nigerian tribes eat dog meat but I swore I will never try such. They served it to me yesterday and I was starving. We eat everything in Africa! The Chinese eat it too.

#VitaminKemi How to stir fry vegetables and thin Pork chops in #Nigeria #HNNFood

Watch me stir fry this great meal at a low cost all the way to the one man stove I used. Eat like the rich politicians! Here I cook the veggies! Use whatever vegetables you want. Then I added my thin pork chops.

#VitaminKemi Save time and Money by cooking in bulk the #Nigerian way #HNNfood

Turkey leftovers in the Western world can be used to make casseroles, sandwiches and more. Here in Nigeria, we cook it in a stew and store it away. We are given live turkeys which we slaughter behind our houses. I grew up like this then spent 37 years abroad where I just picked my bird out of a freezer in a supermarket. Now I am back in Africa 24/7. Watch the video below:

#HNNFood Check out this #Pizza with Doritos stuffed in it.

Taco Bell Doritos Locos Tacos fans may want to brace themselves. Pizza Hut Australia has created a stuffed-crust pizza — covered in Doritos.

The Doritos Crunchy Crust pizza has a mozzarella cheese-stuffed crust layered with nacho cheese Doritos chips and cheddar cheese. And when we say the crust is layered with Doritos, we don't mean crumbs. There are actual bite-size pieces of chips on every inch of the crust for extra crunch.

Soon it will go global. I'm surprised this is not in the USA yet.

#HNNfood #VitaminKemi Amala is the Cassava/Yam delicacy of my hometown #Ibadan cc: @ConnectIbadan

I don't eat Amala outside my house, I am from Ibadan, Nigeria where it was invented. Best stew for me is Jute and fish stew. Jute is called ewedu in my language. Amala is from the yam and cassava plant flour. the yam dark, the cassava light.

#HNNFood #Vitaminkemi Why BRUNCH is cheaper for #Nigerians on the MOVE!

When eating brunch, try a fruit on the side. Cold ramen noodle salad and mango slices compliment my meal with a wheat bread, butter and jam sandwich pushed down with pineapple juice. It is so much cheaper to eat brunch in Nigeria as it is two meals in one. It is now 11am in Nigeria and I have not eaten breakfast, might as well mix it with lunch and thus brunch.

#HNNFood #VitaminKemi Get close to my African Veggie COLD HEALING soup.

My veggie soup for the cold with chunks of meat, snails and dried fish. In Nigeria, we use the bitterleaf, waterleaf and efirin a platelet plant. In the African winter aka Harmattan, this soup is a saviour and helps with breathing and congestion.

#HNNFood #Vitamin Why Nigerian MEN LOVE my #CATFISH>>cc: @YoungPlatinum (lol)

Making my catfish pepper soup takes genius. I stuff it with seasonings and vegetables. This is a Nigerian delicacy that must be cooked very richly with a variety of spices. Catfish is actually very good for you.

#HNNFood #VitaminKemi How to make a chicken sandwich in #Nigeria

Remember that chicken by the laptop? Cut some breast and dark meat then add mayonnaise between the wheat bread. I wash mine down with a bitter lemon drink.

#HNNFood #VitaminKemi Why you must GARNISH #SUYA (Nigeria's Nightly BBQ treat) with Salad

Always add a variety of salad ingredients to garnish your #suya, the nightly BBQ treat in Nigeria. In the old days it used to be garnished with just onions and someone came up with the salad in the suya idea. More vitamins, more nourishment.

#HNNFood #VitaminKemi How to convert #Nigerian Puff Puffs to JELLY DONUTS!!

Be creative in Nigeria. I can hardly find a good donut in Nigeria anywhere so I got creative. You go outside and buy puff puffs which is basically fried dough. I slice it and tuck some jam or jelly inside after I have rolled them in granulated sugar. It's that simple.

#HNNFood #VitaminKemi HATE Ofada rice? (Nigeria's Smelly Rice) Then Cook the Stew and use your OWN RICE!

Ofada stew is a palm oil based stew ate with a bed of rice. It contains different parts of cow beef, locust beans and seasonings. I personally don't like the odour of the ofada rice and prefer my own plain white rice and cook the stew.

#HNNFood #VitaminKemi Red Bananas and Millet Cereal helps you CONQUER the #African OFFICE!

Try a millet cereal today with some red bananas. These grow behind my house and I just harvested them green and ripened them in the dark pantry.

#HNNFood #VitaminKemi Strain some watermelons and drink up the juice

Straining my watermelon for the juice high in vitamins then Chill the finished product and slip a cube of sugar when loved ones are not looking. Great in vitamins.

#HNNFood #VitaminKemi The Classic Nigerian Breakfast of Ogi and Moin Moin

Ogi and Moinmoin (Credit Keminications media)
You only live once with my Ogi and MoinMoin sprinkled with cubes of sugar and powdered milk mixed with warm water. The number of sugar cubes have nothing to do with your blood sugar. You are metabolizing a lot of carbohydrate and protein in his meal

Ogi is a corn cereal which appears like custard and MoinMoin are bean cakes steamed in a leaf. It may contain anything from egg fillings to fish or corn beef.
